Favorite Kid-Friendly Veggie Patties

This is my favorite recipe for veggie burgers, the original recipe came from a friend and I have changed it to come up with this version, which I like a bit better! It is NOT a vegan recipe, although you could easily leave out the eggs and call it vegan. Heat oven to 375.

  • 6 1/2 cups water
  • 6 tablespoons olive oil
  • 1/2 cup nutritional yeast
  • 1 very very finely minced onion
  • 4 cloves of crushed garlic
  • 1 bell pepper, your choice in color, but I like red
  • 1 large zucchini
  • 1 large carrots
  • 7 cups old fashioned oats
  • 2 large eggs
  • salt and pepper!!! Don't forget to season them, they'll be bland!

 Bring the water, oil and yeast to a boil, then mix in the oatmeal. Combine all ingredients together, adding the egg after you have tasted for salt and pepper. Form into patties, and bake(yes bake, it works better) until done through. Because you're adding egg, you need to make sure it's done. Turn the patties after about 15 minutes, and cook for another 15-20 until they're done! Break out the hamburger buns, toppings and enjoy.

Makes approximately 24 patties - these can be frozen and pulled out for later enjoyment also. They make a great easy summer lunch outdoors.
